Blueberry Oatmeal Pancakes
January, 28th 2022
Hello Gluten Free Pancakes! Whip up a batch of these homemade Blueberry Oatmeal Pancakes using quick oats. I would’ve purchased oat flour, however it seemed easier to grind the quick oats in the blender (much cheaper). This is a simple and healthy breakfast. That’s perfect for babies and adults. Just a heads up, these pancakes are thick!
# of Ingredients:
what you will need
1 Large Egg
1 cup Oat Flour (you can blend 1cup of quick oats)
1 1/2 tsp Baking powder
1 tbs Raw Sugar
1 tsp Pure Vanilla or Almond
2 tsp Apple Cider Vinegar
1/3 cup Milk of your choice
Handful of blueberries
Suggested topping: Blueberry Compote
Step by Step Instructions
- If you don’t have any oat flour you can always blend 1 cup in a food processor.
- Using a medium size bowl, combine your dry ingredients (oat flour, raw sugar, and baking powder). Whisk together.
- Add wet ingredients to the mixture (egg, vanilla or almond extract, apple cider vinegar, and milk).
- If the mixture is too thick to your liking, add a few tablespoons of water.
