Blueberry Oatmeal Pancakes

Hello Gluten Free Pancakes! Whip up a batch of these homemade Blueberry Oatmeal Pancakes using quick oats. I would’ve purchased oat flour, however it seemed easier to grind the quick oats in the blender (much cheaper). This is a simple and healthy breakfast. That’s perfect for babies and adults. Just a heads up, these pancakes are thick!

what you will need
1 Large Egg 
1 cup Oat Flour (you can blend 1cup of quick oats)
1 1/2 tsp Baking powder 
1 tbs Raw Sugar 
1 tsp Pure Vanilla or Almond
2 tsp Apple Cider Vinegar 
1/3 cup Milk of your choice 
Handful of blueberries  
Suggested topping: Blueberry Compote

Step by Step Instructions

  1. If you don’t have any oat flour you can always blend 1 cup in a food processor.
  2. Using a medium size bowl, combine your dry ingredients (oat flour, raw sugar, and baking powder). Whisk together.
  3. Add wet ingredients to the mixture (egg, vanilla or almond extract, apple cider vinegar, and milk).
  4. If the mixture is too thick to your liking, add a few tablespoons of water.
