Carrot Muffin Bread

This Carrot Muffin Bread is a favorite in my household. You can turn this recipe into muffins for the kiddos or bake in a bread pan. This recipe is fluffy and packed full of apples, cranberries and carrots! Eventually, I plan to make mini muffins for my toddlers school snack. I hope you like this recipe!

what you will need
2 cups flour
1/2 cup dried cranberries (Or Raisins)
1 green apple peeled and shredded
3 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup raw sugar
1 cup vegetable oil
3 eggs
2 cups raw carrot shredded

Step by Step Instructions

  1. Preheat oven to 375°F. Greased or line muffin tins OR bread pan

  2. In a large bowl whisk together flour, baking powder, cinnamon, and salt.

  3. Whisk raw sugar, oil, and eggs in a separate bowl.

  4. Stir egg mixture into dry ingredients just until combined.

  5. Lightly fold in carrots, apples and cranberries.

  6. Divide the mixture into prepared muffin tins OR bread pan

  7. Bake 25-29 minutes or until tops are golden and a toothpick comes out clean.
