1 cup grated carrots
1/2 cup dried cranberries
1/2 cup unsalted butter, softened
1/4 cup Raw sugar
1/4 cup brown sugar, packed
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a medium-sized mixing bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a separate large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture becomes smooth and creamy.
