Your next Girls Night In will actually feel like a trip to the beach with this drink. It’s pretty much the perfect party drink! And the addition of sorbet gives the champagne that extra something it needs. Cheers!

Sorbet

  • One 13.66 fl oz can of Coconut Cream
  • 16 oz bag of frozen strawberries
  • 16 oz bag of frozen pineapples
  • 1 Bottle champagne
  • Sweet Coconut Flakes (Garnish)
  • Fresh Strawberries (Garnish)

Note: You will need a food processor for this recipe. 

Step by Step Instructions

Step 1

In a medium bowl, whisk coconut cream until smooth

Step 2

Using a food processor, add the frozen pineapples, strawberries, and coconut cream. Blend on Medium speed until smooth.

Step 3

Taste the sorbet, you can sweeten it with 1 or 2 tablespoons of honey, then pulse a few times.

Step 4

Add sorbet to a mixing bowl (or Tupperware), freeze for 20 to 30 mins.

Step 5 (Garnish Tip)

If you have lemon juice, add a small amount to a saucer. Add Coconut flakes to a separate saucer. Place the rim of your champagne glass into the lemon juice then coconut flakes.

Step 6

Remove sorbet from the freezer, add to your favorite champagne or sparkling wine.

Note: Store remaining Sorbet in the freezer for later. You will need to unthaw sorbet the longer you let it stay frozen.
