NOT YOUR AVERAGE BLACK BEAN BURGERS

My friend Lydia MC created this healthy dish. You will never want to eat frozen veggie burgers again. These are so easy, and you’ll be proud to have created such a vegetarian delight!

what you will need
Burgers Patties 

  • One 15-ounce can of black beans (drained and rinsed under cold water)
  • One 15-ounce can of whole kernel corn (drained and rinsed under cold water)
  • 2 large Carrots (peeled and shredded fine, use a cheese grater)
  • 1 Medium size white onion (Diced)
  • 2 Garlic Cloves Minced
  • 1 egg (whisked)
Additional Toppings (optional) We added cheese, lettuce, & Spicy Mayo

  • Cheese (any kind)
  • Lettuce
 

Spicy Mayo

  • One cup of Miracle Whip
  • 3 tablespoons Sriracha hot chili sauce

Whisk together and Voila! You have spicy Mayo!

Step by Step Instructions

Step 1

Saute onions for 5 – 7 mins, then set aside

Step 2

In a food processor, pulse sauteed onions, garlic, and 1 can black beans, to combine.

Step 3

Transfer mixture to a large mixing bowl, add shredded carrots, corn, and egg. Using a rubber spatula mix until well combined.

Step 4

Divide mixture into patties we managed to make 10 – 12! Place four patties onto a small sheet of wax paper (Layer additional patties w/ wax paper to prevent from sticking).

Step 5

Place your patties in the freezer for 10mins *Tip* Store additional patties inside a ziplock bag in the freezer for later use!

Step 6

Heat oil in frying pan, and cook burgers for 6 minutes on each side or until heated through. Toast burger buns, add cheese and enjoy with your favorite toppings! Enjoy friends!
